Some days you just get home and feel like doing absolutely nothing and can’t be bothered spending an hour in the kitchen making a fancy dinner. Lucky for you, I have put together a few quick meals that don’t take too long to cook but taste delicious…
Eggs are very versatile, meaning you can add a bunch of veggies and some meat to make a full meal out of them. They’re full of healthy fats and protein and will keep you satiated. And the added veggies will add to their overall nutritional value.
If you make up a bunch of soups and stews and freeze them, you can just pull them out of the freezer and heat them up as desired.
Cut up some tomato and red onions, drizzle olive oil and white vinegar and add salt and pepper. Serve on top of toasted sourdough bread with butter.
Fry leftover veggies and meat (if you want) and add tamari and some cooked rice. You can also experiment with quinoa or cauliflower rice.
- Warm salad
A kale salad is super easy to make and delicious. Fry some bacon, beans and garlic. Add lemon and kale and you have dinner.
If all else fails, go through your fridge and find something that’s about off and create a meal off of that. You’ll not only get a nutritious dinner, but you will be saving food and money.
